食べることは生きること。「食べたもの」で私たちは出来ています。だからこそ、体に優しい食事が大切なのです。宿でお出しするのは、一つ一つ丁寧に時間をかけて育てた食材や昔ながらの体に優しい製法・調理法で作ったお料理ばかり。自然育ちの栄養をたっぷりと味わってみてください。

To eat is to live. You are what you eat. That is why it’s important to eat meals that are gentle to your body. At our Guesthouse, what we serve is made with the ingredients that farmers carefully grew over time, and the dishes are made with traditional recipes and methods that are friendly to your body. Please try our meals and enjoy the nourishment given by fertile nature.

夕食

夕食は郷土料理を中心に、会津塗のお膳でお出しします。当宿では、ほぼ全ての料理にこの土地で採れた食材を使用しています。

We serve mainly local traditional meals with aizu-coated traditional plates. Almost all the ingredients we use for meals are from this area.

朝食

食材の持つ陰と陽の性質に合わせて重ねる「重ね煮」という調理法で、食材それぞれが持つ美味しさを引き出します。陰と陽のバランスがとれた食事は体を健康な状態に整えます。

With the cooking method “kasaneni” (boiled in layers), we balance ingredients together, using the nature of yin and yang, to bring out the deliciousness of each ingredient. A balanced meal is a balanced body.

四季折々の食材・献立

spring

旬真っ盛りを迎えるわらび、こごみ、ふきのとうといった山菜たち。天ぷらやおひたしにして美味しくいただきます。

Mountain vegetables such as bracken, ostrich fern, and petasites japonicus are in season. We serve them as tempura or “ohitashi” (boil and soak in sauce).

summer

周辺の畑ではとまと・なす・きゅうりなど夏野菜が毎日のように収穫できます。手作り味噌の炒め物や南蛮巻きにしてお出しします。

From the surrounding fields, we can harvest summer vegetables such as tomatoes, eggplants, cucumbers and so on. We serve them as a vegetable stir-fly with handmade miso or “nanban-maki”.

autumn

美味しい新米がいただけるこの季節。きのこ、鬼胡桃、自然薯など山の幸も豊富に収穫できます。

This is the season when you can have freshly harvested rice. You can also harvest for yourself food from the mountains such as mushrooms, walnuts, and Japanese yams.

winter

山間地域の保存食・郷土料理が中心。干し大根、山菜の塩漬け、のっぺ、わっぱさみなどをお出しします。

We serve mainly preserved and regional dishes in this mountainous area, such as dried radish, salted mountain vegetables, “Noppe-soup”, “Wappasami”, etc.

奥阿賀はお米や山菜の宝庫。自然本来の循環機能が、エネルギーある食材たち、きれいな水、四季折々の恵みをもたらしてくれます。また、調味料は昔ながらの製法で作られたものを選んで使用しています。栄養を豊富に含んだ名脇役たちです。

Okuaga is a treasure box of tasty rice and wild vegetables. The circle of life gives us energy-rich ingredients, clean water, and variety in the four seasons. In addition, the seasonings we choose and use are made using traditional methods, and they support food that is already rich in nourishment and taste.

常浪川(とこなみがわ)がもたらす綺麗な水は、水道水でも十分美味しく飲めるほど。煮炊きに用いることで、料理が美味しく仕上がります。

The clear water that the Tokonami river brings is tasty enough to drink even as tap water. By using it in cooking, the meals are even more delicious.

We harvest a variety of vegetables throughout the year from our small organic farm.

春にはわらび、ぜんまい、こごみ、ふきのとうなどの山菜が毎日御膳を彩ります。

In spring, we serve colorful mountain vegetables such as bracken, osmund, ostrich fern, and petasites japonicus.

てんさい糖、きび糖、はちみつなど、精製されていないものだけを使っています。

We use only unrefined sugars, such as beets sugar, cane sugar, and honey, etc.

天日・釜だきといった昔ながらの製法を用いた、欠乏しやすいミネラル・マグネシウム・カルシウムを豊富に含む塩を使用しています。

We use salt which is rich in minerals, magnesium, and calcium that your body needs, made by the traditional method of sun drying and iron pod boiling.

醤油・味噌・酢

大豆・米・麦・塩・糀などのシンプルな原料を用い、自然にまかせてゆっくりと熟成・発酵したものを使用しています。ミネラル・マグネシウム・カルシウムが豊富に含まれており、特に昔ながらの製法で作ったお味噌は「医者いらずの薬」と言われるほどの健康食品です。

We use raw materials such as soybeans, rice, wheat, salt, and koji (malted rice) that are slowly matured and fermented. They are rich in minerals, magnesium, and calcium. Especially the miso (fermented soybean paste), made by a traditional method, is a healthy food and is “medicine that does not need a doctor”.
